Blackeye peas salad


 Preparing the beans.
1/2 cup of blackeyed peas (soaked overnight)
1 chilli pepper
1/4 chopped onion
1 inch ginger
1 teaspoon salt
a few pepper corns
1 fresh bay leaf
water to cover an inch over beans

Toss all ingredients in to a pot a cook till beans are tender

Once the beans are done... you can refridgerate or toss them into this yummy salad.

You will need:
1 cucumber diced
1/2 cup of grape tomatoes
1/2 red onion chopped
Juice of one lime
Fresh cilantro
I diced chilli
2 cups of baby spinnach leaves
1 diced boiled potato
1 teaspoon cumin powder
Salt& pepper to taste

Toss it all together and enjoy!

This is yummy, healthy and very filling...without filling you out.
